BLACKENED ROUND STEAK AND EGGS

Ingredients
  

  • 1 ostrich round steak
  • 1/4 tsp season salt
  • 1/2 tsp blackened seasoning
  • 2 tsp olive oil, divided
  • 2 eggs
  • salt and pepper, to taste
  • red pepper flakes (optional)

Method
 

  1. Pat dry and season both sides of steak with salt and blackened seasoning. Lightly coat cast iron or non-stick skillet with 1 tsp olive oil. Sear steak on medium-high heat for 3-4minutes per side, or until it reaches an internal temperature of 135-140° F. Remove to plate.
  2. Using the same skillet, coat with remaining 1 tsp olive oil. Crack two eggs into the pan taking care to not break the yolk. Season with salt and pepper. Cook about 2 minutes until the whites start to set. Gently flip the eggs and cook another 1-2 minutes. Plate together and season the eggs with red pepper flakes if desired.
